Beth Gilbert, daughter of Lenore and Robert Gilbert of Gilbert’s 17th Street Grill in Fort Lauderdale, FL started Little Gilbert’s Cookie Company out of a love for cookies and family. During a very difficult time in early 2015, Robert Gilbert suffered a disabling stroke, which took him and Mrs. Gilbert out of the family business for an extended period of time.

Mrs. Gilbert had always made all the desserts in the restaurant including homemade key lime pie, cheesecake and rocky road cookies. In her absence, Beth was left to run the family business and without Mrs. Gilbert the dessert display case looked so empty. In addition, attempting to make Mrs. Gilbert’s desserts just did not go well.
So, Beth decided she couldn’t leave the case so empty and started baking chocolate chip cookies and then taking everything she could find in the restaurant and adding them to the cookies to fill up the display case. In the process, she started baking different cookie types and adding new toppings, resulting in the infamous kitchen sink cookie.
With such an overwhelming positive response from customers, Beth started making more and more varieties. Today, there are over 10 different types of kitchen sink cookies and new ones are launched on a regular basis. Out of a very difficult situation, something wonderful happened – all for the love of family and cookies.
